SUMMARY:Unicoi: Food For Profit Workshop
DESCRIPTION:This UT Extension Center for Profitable Agriculture workshop gives you the tools to get your small food business started. Workshop will be held at Mountain Harvest Kitchen on February 12th to help farmers and food entrepreneurs interested in starting their own food processing enterprises. \nMegan Leffew\, Marketing Specialist\, and Nathan Miller\, Food Safety Specialist\, will lead sessions on planning your business\, regulations\, marketing\, safe food handling\, packaging\, financing and more providing information that participants will be able to use immediately to make sure their businesses start out and grow in a way that matches their vision and goals. \nABOUT THE INSTRUCTORS: Megan Lefew joined the Center for Profitable Agriculture in June 2003 as a Marketing Specialist and focuses on marketing fundamentals and applied research. She provides leadership to the Center’s programs in agritourism\, value-added fruit and vegetable products\, farmers markets and other direct marketing channels. Megan is a native of Yuma\, Colorado and was raised on a commercial cow/calf operation. She earned a M.S. degree in agricultural economics with an emphasis in marketing and a B.S degree in agricultural business and animal science-industry from Colorado State University. \nNathan Miller has worked with UT Extension focused on food safety since 2016. Prior to working in the Food Science Department\, he worked for 10 years in the meat manufacturing industry in Quality Assurance. Nathan leads the UT Extension Domestic Kitchen and Better Process Control School Workshops. \nREGISTRATION: Pre-register for this event using ticket link.Seats are limited and tickets are non-refundable. Registration fee is nonrefundable. \nWHAT IS A SPECIALTY FOOD?\nThere’s no hard-and-fast rule but typically ‘specialty foods’ are defined as unique and high-value food items made in small quantities from high-quality ingredients differentiated by their originality\, authenticity\, ethnic or cultural origin\, specific processing\, ingredients\, limited supply\, distinctive use\, extraordinary packaging or channel of distribution. Think specialty flavored bbq sauces\, nut oils\, bean-to-bar chocolate\, etc. If your products are made in small batches- they fall into this category. \nINSTRUCTOR BIOS:\nMAREN TROCKI is the Director of Dairy & Frozen at The Fresh Market\, based in Greensboro\, NC\, overseeing the strategic plan for a wide variety of categories – everything from frozen pizza to yogurt. As Director\, Maren has committed to sourcing traditional\, hard to find foods from around the world\, as well as the latest in product innovation. Prior to The Fresh Market\, Maren worked at West Point Market in Akron\, Ohio\, and Southern Season in Chapel Hill\, North Carolina. Maren has nearly two decades of experience in the Grocery industry and has cultivated a broad knowledge of specialty foods. Maren has been a member of the Specialty Food Association since 2001 and served on the Retailer Network Council. \nRON TANNER is Vice President\, Philanthropy\, Government & Industry Relations for the Specialty Food Association\, owner of the Fancy Food Shows®\, and the publisher of Specialty Food Magazine. Ron has worked for the Specialty Food Association\, and its 3\,800+ members\, since 1987. Ron has appeared on The Today Show\, CNN and Food Network\, and has been quoted in Newsweek\, The New York Times\, and Parade Magazine. He has an M.S. in Journalism from Columbia University in New York City\, and a B.A. in English and Communications Studies from Oberlin College\, Oberlin\, Ohio. Join Camille Cody\, Herbalist and Farmer with Grand Oak Farms\, in exploring how to make fire cider from scratch for improving digestion and metabolism\, building immunity\, as well as improving circulation that will keep you and your loved ones well this winter! \nWe will discuss health and medicinal benefits of our ingredients: ginger\, horseradish\, garlic\, onion\, hot pepper\, turmeric\, lemon\, and apple cider vinegar.
