Unicoi: Chicken 101 Technique and Butchery Basics

Are you ready to ramp up your butchery skills? Then join us for this hands-on workshop, Chicken 101: Technique and Butchery Basics, and learn to break down, carve, and cook the perfect bird.

All attendees will receive their own whole chicken and a selection of seasonal veggies to work with. Along the way, there will be tips and discussion of recommended cooking techniques, and the class will prepare a meal together for all to enjoy.

All proceeds from the class go directly to support the Mountain Harvest Kitchen and Boone Street Market. Registration is $40 and class seats are limited.

About the Instructor: Chef Neal Smith, kitchen manager at Boone Street Market, is a seasoned professional chef that specializes in southern cuisine. His experiences in fine dining restaurants to casual kitchens across the nation have shaped his leadership style and technique. A native to this region, Chef Neal has dedicated his career to the preservation of traditional recipes and the culinary heritage of Appalachia.

Fresh local and seasonal ingredients are his inspiration and the basis for each dish he creates. Check out his daily specials from the Boone Street Market kitchen.
